  1. the vacuum seal bags are to prolong the life of something, but not forever. i wouldn’t eat it, if it is several years old.

  2. Because of their oil content, sesame seeds have a shelf life of about two years if stored tightly capped in a cool, dry place or in the refrigerator.

  3. The unsaturated oils in nuts and whole grains go ‘rancid’ over time. Exposure to light and variation in heat accellerate the process, but 6 months or so is about as long as something like that keeps.

  4. Toss them, sesame seeds have a high oil content that can cause them to go rancid very quickly (like sesame seed oil). Next time, store them in the refrigerator. They will last a long long time! The taste is neutral, slightly nutty flavor.

  5. Toss ’em and get 2 bags of sesame seeds. One for immediate use and the other — you can preserve it for 5-10 years — just like the time capsules 🙂
